Summer Mocktail recipes for the English Summertime!

This seems to be a seriously optimistic newsletter as I write this!  Still, the summer months are not over yet and there is still time for the sun to come out and warm our bones and for us to try some of the delicious mocktails below.

Watermelon Mint Fizz:

  • 2 cups fresh watermelon chunks (seedless)
  • 1/4 cup fresh lime juice
  • 8-10 fresh mint leaves
  • 1 cup sparkling water
  • Ice cubes

 

In a blender, blend the watermelon chunks, lime juice, and mint leaves until smooth. Strain the mixture through a fine mesh strainer to remove any pulp. Fill a glass with ice cubes and pour the watermelon mixture over the ice. Top up with sparkling water and gently stir to combine. Garnish with a sprig of mint and a slice of watermelon. Serve chilled.

Pineapple Coconut Cooler

  • 1 cup fresh pineapple chunks
  • 1/2 cup coconut milk
  • 1/4 cup coconut water
  • 1 tablespoon honey (adjust to taste)
  • Pineapple slices and shredded coconut for garnish
  • Ice cubes

 

Instructions: In a blender, combine the fresh pineapple chunks, coconut milk, coconut water, and honey. Blend until smooth and well combined. Fill a glass with ice cubes and pour the pineapple coconut mixture over the ice. Garnish with a slice of pineapple and a sprinkle of shredded coconut. Serve chilled.

 

Cucumber Basil Refresher

  • 1 medium cucumber, peeled and sliced
  • 1/4 cup fresh lemon juice
  • 8-10 fresh basil leaves
  • 2 tablespoons agave syrup (or any sweetener of your choice)
  • Club soda or sparkling water
  • Ice cubes

 

Instructions: In a blender, blend the cucumber slices, lemon juice, basil leaves, and agave syrup until smooth. Strain the mixture through a fine mesh strainer to remove any cucumber pulp. Fill a glass with ice cubes and pour the cucumber basil mixture over the ice. Top up with club soda or sparkling water and stir gently to combine. Garnish with a basil leaf or cucumber slice. Serve chilled.

Berry Sparkler

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons honey (adjust to taste)
  • 1 cup sparkling water
  • Mint sprigs and extra berries for garnish
  • Ice cubes

 

Instructions: In a blender, blend the mixed berries, lemon juice, and honey until well combined. Strain the mixture through a fine mesh strainer to remove any seeds or pulp. Fill a glass with ice cubes and pour the berry mixture over the ice. Top up with sparkling water and gently stir to mix. Garnish with mint sprigs and extra berries. Serve chilled.
