This month’s recipe is for Green Goddess Balls, a great snack packed full of energy maintaining ingredients.

It uses dried apricots which have half the amount of sugar that dried dates have which are so common in many energy bars these days.

They also contain coconut oil and coconut, the heart healthy, anti-inflammatory, good for brain and mood fats.  As well as Kiki Health’s ‘Nature’s Living Superfood’ which contains antioxidants and phytonutrients and beneficial bacteria, but you could use any super green powder blend or single greens such as spirulina or chlorella.

Glorious Green Energy Balls Recipe

 

Ingredients

1 cup of unsulphured apricots

1 cup of almonds

½ cup shredded coconut

100ml of coconut oil

½ cup of raisins

1 tsp of ground cinnamon

Pinch of Himalayan pink salt

A squeeze of organic honey to taste (if required)

1 tbsp of greens powder (I like Kiki Health’s Nature’s Living Organic Blend Superfood)

 

Preparation Instructions

Put the almonds into the food processor and blend until chopped finely.

Add the apricots, coconut, raisins, cinnamon, salt, melted coconut oil and greens powder and blend until finely mixed.  Give the mixture a squeeze to check you can form them into balls.

Roll a small amount into a ball (size of your choice) and chill in the fridge for a couple of hours – ready to eat!  Store in the fridge in an airtight container to sustain you for the week.

You can also freeze these balls if you make a large batch.
