Welcome to this month’s recipe featuring a collection of breakfast recipes when you don’t have any more than 5 minutes in the morning to make breakfast. They are very easy, very quick and nutritious with some protein and good essential fats in each of the meals and a little bit of green!
Eggs in a basket
Sourdough Bread
Eggs
Avocado and coriander and sweetcorn
Method – Slice the bread and cut out a hole in the middle. Put in the frying pan and toast on one side. Flip over and crack the egg into the hole. Cook for 3-4 minutes and serve with some avocado/sweetcorn/whatever is in the fridge.
Mediterranean breakfast medley
Tinned mackerel in tomato sauce
2-3 Eggs
Pesto
Avocado
Method – Melt a little butter or coconut oil in a frying pan. Crack 2 or 3 eggs into a bowl and whisk. Add to the frying pan and after 30 seconds add a tablespoon of pesto and scramble. Whilst this is cooking open the tin of mackerel and put on the plate and cut open the avocado, score into cubes and scoop out with a spoon. Then add the scrambled eggs to the plate when they are done.
Omelette
Sourdough bread
Spinach
2-3 Eggs
Frozen veg / or pre-chopped from night before
Optional – mature cheese and pesto
Method – slice and toast the sourdough bread. Melt a little butter or coconut oil into a frying pan. Crack 2 or 3 eggs into a bowl and whisk. Add to the pan. Cook for 2 minutes, then add a handful of spinach and optional grated cheese and pesto and grill for 2 minutes. Serve.
Breakfast Berry Smoothie
Banana
Handful of spinach
Handful of frozen berries
Protein powder (I like the one from Revolution Foods)
Almond Milk
Method – Put it all in the NutriBullet or blender and whizz until smooth.
Porridge with Berries
½ cup of porridge oats
1 cup almond milk
1 tsp of coconut oil
1 tsp ground cinnamon
1 tbsp honey
Handful of berries (blueberries, blackberries, blueberries, strawberries)
1 tbsp of pumpkin seeds
Method – Put the oats and milk into a pan and cook gently for 5 minutes. Melt in the coconut oil. Add the cinnamon and honey. Stir. Put into a bowl and top with berries and pumpkin seeds.
